Salt and Pepper Chicken Wings

Directions

  1. 1Trim off any loose and unwanted skin from the chicken wings.
  2. 2Move the trimmed wings to a bowl.
  3. 3Season the wings with garlic powder, onion powder, ginger powder, a little Shaoxing wine, light soy sauce, a hefty pinch of salt, and white pepper.
  4. 4Mix all ingredients together, ensuring every piece of wing is evenly coated.
  5. 5Move the seasoned wings to the fridge to marinate for at least an hour.
  6. 6Slice up some red and green chilies.
  7. 7Crush some garlic.
  8. 8Prepare the dredge by combining AP flour, cornstarch, and a little bit of baking powder.
  9. 9Bring a pot of food lube to 350 degrees.
  10. 10Carefully cover each wing in the dredge, tap off any excess.
  11. 11Lay the dredged wings into the hot food lube to fry.
  12. 12After about 4 minutes, remove the wings and let them rest.
  13. 13Drop the wings back in to fry for a second time.
  14. 14Remove the wings after 3 minutes.
  15. 15Add a little food lube to a hot wok.
  16. 16Add the garlic and chilies to the wok.
  17. 17Add the fried wings to the wok.
  18. 18Sprinkle a little bit of the crack dust (salt, white pepper, sugar, and MSG) over top.
