Homemade Dumplings

Directions

  1. 1Add flour and hot water to a bowl.
  2. 2Mix until well combined.
  3. 3Knead the dough until smooth.
  4. 4Cover the dough and let it rest.
  5. 5Roll the dough into a log shape.
  6. 6Cut the dough into equal bite-sized pieces.
  7. 7Finely chop carrots, cabbage, and mushrooms.
  8. 8Add seitan mince, carrots, cabbage, and mushrooms to a bowl.
  9. 9Add oyster sauce, salt, white pepper, and cornstarch to the filling ingredients.
  10. 10Mix the filling ingredients thoroughly.
  11. 11Roll out each dough piece into a thin, round wrapper.
  12. 12Place a spoonful of filling in the center of the wrapper.
  13. 13Fold and pleat the wrapper to seal the dumpling.
  14. 14Place the dumplings in a pan with some oil.
  15. 15Add water to the pan and cover with a lid to steam the dumplings.
  16. 16Cook until the bottoms are crispy and the dumplings are cooked through.
  17. 17Serve the dumplings with dipping sauce, crispy chili oil, and chopped spring onions.

Ingredients

  • 250 g all-purpose flour
  • 130 ml hot water
  • 125 g homemade seitan mince
  • 100 g chestnut mushrooms or fresh shiitake
  • 100 g white cabbage
  • 1 small carrot
  • 2 tbsp oyster sauce
  • 1 pinch salt
  • 1 pinch white pepper
  • 1 tbsp cornstarch
  • 1 tbsp black vinegar
  • 1 tbsp soy sauce
  • crispy chili oil
  • spring onion

Tips

  • Once you taste these dumplings, store-bought will never be the same.
  • The dough is super simple, just wheat flour and hot water.
  • The filling consists of homemade seitan and fresh veggies for a meaty texture and, of course, plenty of seasoning.
  • Wrapping the dumplings is my favourite part.
  • Practice makes perfect.
