Directions

  1. 1In a bowl, add diced potatoes, olive oil, and seasonings (salt, Italian herbs seasoning, onion powder, garlic powder, chili powder, and smoked paprika).
  2. 2Mix the potatoes together.
  3. 3Air fry the potatoes at 200°C/400°F for 20-25 minutes, flipping halfway, or oven bake at 200°C/400°F for 30-35 minutes, flipping halfway.
  4. 4While the potatoes are baking, cook up some diced onions in a pan.
  5. 5Once onions have some color, add extra lean beef mince.
  6. 6Add Worcestershire sauce and the same seasonings used for the potatoes to the mince.
  7. 7Once the mince is nearly cooked, add tomato paste and diced garlic.
  8. 8Mix and let the mince fully cook through.
  9. 9In a bowl, add eggs and blended cottage cheese for extra protein.
  10. 10Mix the eggs and cottage cheese together.
  11. 11Cook the egg mixture on low-medium heat, mixing gently every minute or so, until perfectly fluffy.
  12. 12Season the cooked eggs with salt and pepper.
  13. 13Grab a warmed tortilla, evenly distribute the eggs, mince, and potatoes.
  14. 14Top it off with Sriracha mayo and chives.
  15. 15Roll the burrito.

Tips

  • To avoid the tortillas from breaking when you roll them, simply heat them on a pan on low heat for 30 seconds on each side.
  • To store the burritos in the freezer, when you're ready to eat one, first take it out of the wrapper or foil, wrap it in a slightly damp paper towel, and microwave for around 2 minutes (this thaws the burrito to ensure it isn’t cold in the middle), then air fry at 190C or 375F for approximately 5-8 minutes. This last step can also be done in an oven or pan.
