Directions

  1. 1Coat the pot with olive oil.
  2. 2Add shallots, purple onion, and garlic.
  3. 3Add thyme, salt, and pepper.
  4. 4Add purple carrot.
  5. 5Add purple sweet potato.
  6. 6Add purple cauliflower.
  7. 7Add veggie broth.
  8. 8Bring to boil, reduce to simmer, and cook for 15 minutes, until potatoes are fork tender.
  9. 9Blend with an immersion blender or a blender.

  • 1 shallot diced
  • 0.5 purple onion diced
  • 2 cloves garlic minced
  • thyme
  • salt
  • pepper
  • 1 purple carrot diced
  • 2 purple sweet potatoes cubed
  • 1 head purple cauliflower cut into florets
  • 6 cups veggie broth

Equipment

potimmersion blender or a blender

Tips

  • Use less veggie broth if you want a creamier/thicker soup.
