Crockpot Caramelized Onion Pot Roast

Directions

  1. 1Slice up your onions and mince the garlic.
  2. 2Heat a large skillet or Dutch oven over medium-high heat and add the butter to the pan.
  3. 3When the butter melts, add the chuck roast to the pan, sprinkling a generous amount of salt and pepper on top, and sear for about 3-5 minutes per side until a nice dark sear is achieved on both sides.
  4. 4Remove the roast from the pan and set it aside.
  5. 5If needed, add another tablespoon of butter to the pan.
  6. 6Add the sliced onions to the pan and let them cook down for 3-4 minutes or until they release some of their liquid.
  7. 7Pour in the beef broth, add in the minced garlic, bay leaf, thyme, onion powder, Worcestershire sauce, and balsamic vinegar.
  8. 8Stir, and then cover for a few minutes until it reaches a simmer.
  9. 9Remove the pan from the stove and pour about half of the onion mixture into the crockpot.
  10. 10Add the pot roast into the crockpot.
  11. 11Top with the remaining onion mixture.
  12. 12Add more broth to ensure the roast is fully covered if necessary.
  13. 13Place the lid on the crockpot and cook for about 6 to 8 hours.
  14. 14Once done cooking, remove the roast from the crockpot and shred it into smaller pieces.
  15. 15Combine 2 tablespoons of cornstarch and 1/3 cup of water in a small bowl.
  16. 16Add the cornstarch mixture to the slow cooker, stir, and let it cook for an additional 5-7 minutes to make your gravy.
  17. 17Serve the shredded roast atop some mashed potatoes or cauliflower mash and add your gravy.
