High Protein Cheesy Potato Pockets

Directions

  1. 1Dice one medium onion and add to a pan.
  2. 2Add diced chili to the pan (optional).
  3. 3Add 500g of lean ground beef to the pan and brown it.
  4. 4Season the meat with 1 tsp garlic powder, 1 tsp smoked paprika, 1 tsp black pepper, 1 tsp mixed herbs, and 1 tsp salt.
  5. 5Cook the meat until fully browned.
  6. 6Add 900g of peeled potatoes to a pot of boiling water.
  7. 7Add a pinch of salt to the water.
  8. 8Boil the potatoes for 15 minutes until tender.
  9. 9Mash the cooked potatoes in the pot.
  10. 10Transfer the mashed potatoes to a large bowl.
  11. 11Add 1 cup of plain flour and 1 egg to the mashed potatoes.
  12. 12Add a pinch of salt to the mixture.
  13. 13Mix and knead until a dough forms.
  14. 14Cut the dough into 8 equal pieces.
  15. 15Spray your hands with oil and take one piece of dough.
  16. 16Flatten the dough in your palm to create a pocket.
  17. 17Fill the dough with 1/8 of the meat filling.
  18. 18Add 20g of low-fat cheese on top of the meat filling.
  19. 19Close the dough to form a pocket, ensuring it's sealed.
  20. 20Lightly spray a pan with cooking oil.
  21. 21Place the potato pocket in the pan and cook for 1-2 minutes on medium-low heat, covered.
  22. 22Flip the pocket and cook for another 1-2 minutes on medium-low heat, covered.
  23. 23Serve the cooked potato pockets.
