1Pound chicken breasts thin. Add to a bowl with olive oil. Mix together seasonings listed with chicken, then pour onto chicken. Massage into chicken and set aside.
2Heat a large pan to medium high heat with olive oil. Add chicken to pan and cook until crispy golden brown on each side. Once done, remove from pan and let rest.
3While chicken is cooking, make your cowboy butter by combining all ingredients in a bowl.
4Mix all jalapeño popper ingredients together in a separate bowl as well.
5Roughly chop your chicken and add back to a pan over medium heat. Add in onions, jalapeños, and garlic. Cook until onions soften and then make add in your cowboy butter. Melt and stir together with chicken mixture. Remove from heat once combined.
6Lay a slice of bread buttered side down in pan. Spread jalapeño popper mixture on bread. Top with 1 cup of chicken mixture, then cheese, then last slice of bread. Cook until golden brown, flip and repeat.
7Repeat for remaining sandwiches…serve, and enjoy!
