Tater Tot Beef Casserole
Directions
- 1Preheat your oven to 190 °C / 375 °F.
- 2Lightly grease your baking dish with cooking spray, oil, or butter.
- 3In a large skillet over medium-high heat, add the ground beef and chopped onion.
- 4Cook, breaking up the beef, until the meat is browned and the onion is softened (about 6–8 minutes).
- 5Drain excess fat if there’s a lot in the pan.
- 6Add minced garlic (if using) and cook 1 more minute, stirring.
- 7Season with salt, pepper, Worcestershire sauce (if using), and paprika (optional).
- 8Turn heat to low.
- 9Stir in cream of mushroom soup, milk, and frozen mixed vegetables.
- 10Mix until everything is well combined and heated through for 1–2 minutes.
- 11Taste and adjust seasoning (add a bit more salt/pepper if needed).
- 12Pour the beef/veggie mixture into the greased baking dish and spread it into an even layer.
- 13Sprinkle about half to two-thirds of the shredded cheese evenly over the beef layer.
- 14Arrange frozen tater tots in a single, even layer on top.
- 15Place the casserole in the preheated oven.
- 16Bake for 30–35 minutes, until the tater tots are golden and crispy on top and the mixture is bubbly around the edges.
- 17If you want it extra cheesy, sprinkle the remaining cheese over the top in the last 5–10 minutes of baking and return to the oven until melted.
- 18Remove from the oven and let it rest for about 5–10 minutes.
- 19Serve warm—scoop it out with a large spoon or spatula.

- 1 lb ground beef (80–90% lean)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (10.5 oz) cream of mushroom soup
- 0.5 cup milk
- 1 cups frozen mixed vegetables
- 2 cups shredded cheese
- 1 bag (28–32 oz) frozen tater tots
- 1 tbsp Worcestershire sauce
- 0.5 tsp salt
- 0.5 tsp black pepper
- 0.5 tsp paprika
- Cooking spray or a little butter/oil

Tips
- Bacon Cheeseburger Style: Add cooked, crumbled bacon, cheddar and American cheese, and ketchup and mustard to the beef mix.
- Tex-Mex Style: Add taco seasoning to the beef, use corn and black beans, and serve with salsa and sour cream.
