Tips
You can keep the skin on the potatoes if you prefer.
You can use canned chipotle chilis in adobo sauce instead of chipotle chili paste.
You don't have to add all the seasoning if you don't have them all.
The potatoes will come out crispy on the outside and soft on the inside.
