Directions

  1. 1Heat water in a bowl on an induction plate.
  2. 2Add salt and ghee/oil to the boiling water.
  3. 3Add the jowar flour to the boiling water and mix well.
  4. 4Turn off the heat and let the mixture sit for 10-12 minutes.
  5. 5Transfer the mixture to a plate and knead it using a glass or a masher until smooth.
  6. 6Once warm, knead with your hands for 2-3 minutes.
  7. 7Make small balls of dough and dust with dry flour. Roll into thin circles. You can use a plate to cut the circles.
  8. 8Cook the rotis on a tawa or over an open flame, flipping once or twice. If using a tawa, immediately wrap in a cloth to keep them soft. If using an open flame, you can puff them up with a cloth.
