Directions

  1. 1Slice the beef along the grain.
  2. 2Add the beef to a pot with garlic powder, salt, bay leaf and lemongrass.
  3. 3Add coconut water to the pot.
  4. 4Boil the beef.
  5. 5Boil shallots and chili until cooked.
  6. 6Pound the beef with a mortar.
  7. 7Fry the beef until golden brown.
  8. 8Drain excess oil.
  9. 9Pound the boiled chili and shallots with a mortar.
  10. 10Saute the ground chili.
  11. 11Add the tamarind water, the cooking water, salt and seasoning.
  12. 12Cook until done and the water has reduced.

  • 750 gr beef topside
  • 750 ml coconut water
  • 2 sdt garlic powder
  • 2 cloves garlic
  • 1 sdt salt
  • 1 leaf bay leaf
  • 2 stalks lemongrass
  • 30 chili
  • 10 cayenne pepper
  • 20 cloves shallots
  • 2 tamarind
  • 50 ml cooking water
  • 1 sdt salt
  • 1 sdt seasoning

Tips

  • Use beef topside cut against the grain
  • When boiling the beef use coconut water instead of regular water to make it taste more savory
  • Do not skip adding tamarind water
