Honey Chipotle Steak Bowls

Directions

  1. 1In a bowl, mix adobo sauce, avocado oil, coarse salt, Tajin, garlic powder, oregano, black pepper, and cumin.
  2. 2Add the trimmed skirt steak and let it marinate.
  3. 3Dice russet potatoes into small pieces and boil them for about 5 minutes.
  4. 4Pat the potatoes completely dry and season them with Kinder Carne Asada seasoning, Simply Organic Umami Blends Sweet & Smoky, Italian seasoning, salt, and avocado oil.
  5. 5Bake the potatoes at 400°F for 40 minutes.
  6. 6Grill or pan-fry the marinated steak over super high heat for 1.5 minutes on each side until a nice char and medium-rare is achieved.
  7. 7Slice the steak.
  8. 8In a blender, mix Greek yogurt, chipotle peppers, adobo sauce, hot sauce, garlic, honey, cilantro stems, salt, and pepper.
  9. 9Blend until completely smooth. Add milk if needed to achieve desired consistency.
  10. 10Assemble the bowls with roasted potatoes, sliced steak, and honey chipotle sauce.
