Serves 1

Directions

  1. 1Fry up one red onion until brown, not burnt, and set it aside in a separate dish.
  2. 2Add a spoon of sugar to the oil and let it caramelize for about 30 seconds.
  3. 3Add a heaping spoon of tomato paste and cook it down until it darkens a bit.
  4. 4Add a can of tomato sauce and let it simmer on low.
  5. 5While the sauce is cooking, boil your pasta in whatever shape you like.
  6. 6Once the pasta is drained, season the sauce with salt, black pepper, and cumin.
  7. 7Add the fried onions back into the sauce and give it a stir.
  8. 8Pour the sauce into your bowl of pasta little by little until it's coated the way you like.
  9. 9Let the rest of the sauce cool and put it in a ziploc bag to freeze for the next time you make it.

Ingredients

  • 1 red onion
  • 1 spoon sugar
  • 1 heaping spoon tomato paste
  • 1 can tomato sauce
  • pasta
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp cumin

Equipment

separate dishpotziploc bag

Tips

  • Fry the red onion until brown, not burnt, to give the dish a deeper flavor.
  • Caramelizing sugar in oil for about 30 seconds tones down acidity and gives the sauce a rich, slow-cooked taste.
  • Pasta with ridges will usually hold the sauce better.
  • Do not add pasta into the pot of sauce; instead, pour the sauce into your bowl of pasta little by little until it's coated.
  • Leftover sauce can be cooled and frozen in a ziploc bag for future use.
