Remove the pit from the dates.

Put the dates in a cup.

Pour hot water over the dates to soak them until they are nice and soft for about 10 minutes.

Add red wine vinegar to a separate measuring cup.

Add oregano to the vinegar.

Add Dijon mustard.

Add one garlic clove.

Add a good pinch of salt.

Add fresh cracked black pepper.

Add the softened dates to the measuring cup.

Add a quarter cup of olive oil.

Carefully and slowly immersion blend the ingredients. Stay at the bottom for a little bit and slowly make your way up.

Bottle the dressing using a funnel.

2 pitted dates
3 Tbsp red wine vinegar
0.5 tsp oregano
1 tsp Dijon mustard
1 garlic clove
0.5 tsp salt
0.25 tsp black pepper
0.25 cup olive oil

Tips
If you don't have dates, you could always use something like honey.
For the garlic, just one clove is enough. If you put two, your body will register it.
Stay at the bottom for a little bit and slowly make your way up while blending to emulsify the sauce.
The mustard and the vinegar, combined with the dates, sweeten it up and give it a fire taste
