Cut the mutton into smaller pieces.

Slice the red onions.

Fry the onions in oil until golden brown.

Add cumin seeds, coriander seeds, black peppercorns, cloves, cardamom, star anise, bay leaves, cinnamon, and red chilies to the pan and stir.

Roast the spices until fragrant.

Add the roasted spices, ginger, and garlic into the blender.

Add yogurt to the blender.

Blend until smooth.

In a bowl, mix the mutton, the blended mixture, red chili powder, turmeric powder, and salt.

Mix well until the mutton is evenly coated.

Add the marinated mutton to a pan with a little water.

Simmer until the mutton is cooked through.

Serve the mutton with Naan bread, onions, lemon, and tomatoes.
