Jalapeño Onion Jam

Directions

  1. 1Thinly slice the onions and jalapeños.
  2. 2Add everything to a large pot: onions, jalapeños, oil, and salt.
  3. 3Cook on medium heat, stirring often.
  4. 4After about 20–30 minutes, the onions will soften and release liquid.
  5. 5Increase heat slightly to bring it to a gentle simmer.
  6. 6Continue cooking for about 1 hour total, stirring frequently so it doesn’t burn.
  7. 7Once the mixture becomes soft, golden, and jam-like, stir in the honey.
  8. 8Cook another 5–10 minutes, then remove from heat.
  9. 9Let cool — it will thicken more as it cools.

  • 4 extra large yellow or sweet onions
  • 8 jalapeños
  • 2 tsp salt
  • 1 tbsp honey
  • 0.5 cup avocado oil (or any neutral oil)
