Cheesy Potato Soup

Directions

  1. 1Cut the red potatoes into slices.
  2. 2Dice the potato slices using a food chopper.
  3. 3Simmer the potatoes in chicken broth until they are fork-tender.
  4. 4Cook the bacon and set it aside.
  5. 5Cook the cubed ham until it gets a little color.
  6. 6Add flour to the pan with bacon grease.
  7. 7Cook the flour for a minute to cook off the raw flour taste.
  8. 8Add 2 cups of milk and all the seasonings to the pan.
  9. 9Whisk everything together until well combined.
  10. 10Add the remaining 2 cups of milk and 4 cups of chicken broth to the pan.
  11. 11Add one can of cream of chicken with herbs soup and 8 ounces of sour cream.
  12. 12Whisk until combined.
  13. 13Add 16 ounces of Velveeta cheese and 16 ounces of either Cheddar Jack or Colby Jack cheese.
  14. 14Lower the heat and stir frequently to prevent the cheese from sticking to the bottom.
  15. 15Add the cooked potatoes.
  16. 16Add the cooked ham and bacon.
  17. 17Stir everything together.
  18. 18Let it cook on low for about 10 minutes, stirring every once in a while.
  19. 19Serve and enjoy your cheesy potato soup.

  • 1 pound Bacon
  • 8 ounces Cubed ham
  • 0.5 cup Flour
  • 4 cups Whole milk
  • 4 cups Reduced sodium chicken broth
  • Seasonings
  • 1 can Cream of chicken with herbs soup
  • 8 ounces Sour cream
  • 16 ounces Velveeta cheese
  • 16 ounces Cheddar Jack or Colby Jack cheese
  • Salt
