Directions

  1. 1Remove the tips and the possible remaining feathers from the chicken drumsticks.
  2. 2Burn the feathers with a blowtorch or directly on the stove flame.
  3. 3Prepare a mojo by crushing the cloves, pepper grains, garlic, salt, mustard, orange juice, sweet paprika and oregano in a mortar.
  4. 4Marinate the chicken drumsticks with the mojo.
  5. 5Put the marinated chicken drumsticks in a baking dish.
  6. 6Peel and slice the potatoes and the boniato into 1cm thick slices.
  7. 7Slice the onion, garlic and bell peppers (red and green).
  8. 8Heat some olive oil in a pan and add the onion and garlic.
  9. 9After 5 minutes, add the bell peppers.
  10. 10Stir for a minute, then add the potatoes and boniato.
  11. 11Season with salt and pepper and stir-fry for 5 minutes.
  12. 12Add the white wine and let the alcohol evaporate.
  13. 13Add the water and cook for 5 minutes more.
  14. 14Pour the vegetables in a baking dish.
  15. 15Put the chicken and vegetables in the oven.

  • 250 gr Boniato/Batata
  • 0.5 medium onion
  • 0.5 red bell pepper
  • 0.5 green bell pepper
  • 1 glass white wine
  • salt
  • pepper
  • oil
  • to decorate parsley

Tips

  • Prepare everything in advance.
  • Preheat the oven to 180 degrees.
  • Cook the two preparations at the same time for approximately 1 hour.
  • After 25 minutes, turn the drumsticks so that they brown well on all sides.
