Directions
- 1Start by blending green bell pepper, Scotch bonnet and green onions together and set aside.
- 2Sear cuts of seasoned beef until it gets a nice color.
- 3Add finely chopped onion and garlic to the beef.
- 4Add the blended pepper mixture and season with salt.
- 5Add tomato paste.
- 6Mix natural peanut butter with hot stock until smooth and no lumps remain.
- 7Pour the peanut butter mixture into the pot.
- 8Season with paprika, thyme and bay leaf and black pepper.
- 9Add sweet potato, okra and Scotch bonnet.
- 10Finish the stew in the oven.
- 11Serve it up and enjoy.
