Creamy Hungarian Mushroom Soup
Directions
- 1Clean and slice 1.5 pounds of mushrooms.
- 2Cook mushrooms and onions in olive oil until mushrooms are reduced by about half and golden brown.
- 3Remove the mushrooms and onions from the pot.
- 4Add butter to the pot and make a paprika infused roux.
- 5Add flour, dried dill, paprika and salt to the butter.
- 6Whisk in 4 cups of broth.
- 7Add the cooked mushrooms and onions back to the pot.
- 8Stir in sour cream and milk.
- 9Add 1 tablespoon of vinegar for tartness.
- 10Add fresh parsley.

- 1 cup fresh parsley
