1In a food processor, add one bunch of parsley including stems, one large onion, one red pepper, a few garlic cloves, and an optional jalapeño if you like things spicy.
2Blend all the ingredients together until mushy.
3Strain the liquid through a fine mesh strainer and squeeze out all the juice.
4Add the strained vegetables to the ground beef.
5Add 1/4 cup of tomato paste, 1 teaspoon of salt, 1 teaspoon of black pepper, 2 teaspoons of paprika, and 1 teaspoon of turmeric to the meat mixture.
6Combine all the ingredients together with your hands.
7Grab a baking sheet, drizzle some oil on it, and transfer the kebab mixture onto the sheet.
8Flatten the kebab mixture on the baking sheet to about 1/2 inch thick.
9Grab a spatula or pastry cutter and cut the kebab into strips, about 1 1/2 inches thick.
10Score the meat horizontally.
11Place the baking sheet with the kebab into a preheated oven at 425 degrees Fahrenheit for 15 minutes.
12While the kebab is baking, chop up two to three beefsteak tomatoes.
13Transfer the chopped tomatoes to a bowl and wipe up the tomato juice from the cutting board.
14Chop one large onion and add it to the tomatoes in the bowl.
15Chop one bunch of parsley, including stems, and add it to the bowl with the tomatoes and onion.
16Drizzle a good amount of olive oil over the salad.
17Squeeze fresh lemon juice over the salad.
18Add some salt and sumac to the salad.
19Toss the salad ingredients together.
20Prepare the tahina sauce by pouring about one cup of tahina into a bowl.
21Add about one cup of ice-cold water to the tahina, a little bit of salt, and fresh squeezed lemon juice.
22Whisk the tahina ingredients until creamy.
23Check the kebab in the oven; it should be looking gorgeous.
24Give the kebab a broil for about 5 minutes until browned.
25Grab a flat pita, place a kebab piece on it, add the salad, and roll it up.
26Drizzle tahina sauce over the rolled kebab and enjoy.
