1Clean the mushrooms with a wet paper towel until they are nice and clean.
2Cut the mushrooms into quarters or thirds.
3Dice one yellow onion.
4Cut the steaks into thin strips, about half an inch thick.
5Season the steak with all purpose seasoning, salt, pepper and smoked paprika; let it rest for 10 minutes to absorb the seasoning.
6Boil the egg noodles in salted water according to the package instructions.
7Heat a cast iron skillet over medium-high heat with avocado oil.
8Add the seasoned steak to the skillet and sear until browned on all sides, giving each piece elbow room to breathe to get a nice sear.
9Remove the steak from the skillet, leaving the fat and flavor behind.
10Add the diced onions and mushrooms to the skillet and sauté with two tablespoons of butter, salt, pepper, and smoked paprika until caramelized.
11Add one tablespoon of garlic paste, one tablespoon of Dijon mustard, one to two teaspoons of soy sauce, a few dashes of Worcestershire sauce and one teaspoon of Better Than Bouillon vegetable base. Mix well.
12Add two tablespoons of all-purpose flour, mix well, and cook for a minute or two to remove the raw flour taste.
13Add the beef broth and bring to a simmer over medium-high heat.
14Temper the sour cream by adding a little bit of the warm gravy to it, mix it together, then add it to the skillet.
15Mix well and bring to a simmer. Adjust seasoning as needed. Add freshly cracked black pepper.
16Add the seared beef back to the skillet. Mix in and let simmer to absorb flavors.
17Add fresh chopped parsley.
18Serve over egg noodles.
