Chicken Shawarma Wrap

Directions

  1. 1Preheat oven to 400 degrees.
  2. 2Get a sheet of foil or parchment paper.
  3. 3Put your ground chicken on there.
  4. 4Put another piece of foil/paper over top and roll it out until it is evenly thin.
  5. 5Season it.
  6. 6Then roll it up tightly.
  7. 7Cut the rolled chicken in half so that it would fit in the baking pan.
  8. 8Add wrapped chicken to pan alongside cherry tomatoes and head of garlic with top chopped off exposing the garlic.
  9. 9Pour olive oil on top and season with salt.
  10. 10Put the pan in the oven for 40-45 minutes.
  11. 11While this is cooking, prepare your toppings.
  12. 12Slice red onions thinly (use a mandolin if you have it).
  13. 13Pack sliced red onions tightly into a jar or container.
  14. 14In a small pot, add the water, vinegar and honey and bring to a simmer.
  15. 15Once it reaches a simmer turn off the heat and let it cool for a minute.
  16. 16Add the mixture over top of the red onions.
  17. 17Let them sit in room temp for 15 minutes and then put in fridge.
  18. 18Once chicken is done, take it out of the oven and let it cool.
  19. 19While it is cooling, make your tzatziki.
  20. 20Add yogurt, grated cucumber, smashed and roasted garlic, chopped dill, olive oil, salt, pepper and mix.
  21. 21Get your lavash bread and build your wrap.
  22. 22Sear in a pan to ensure it’s closed and warm.
  23. 23Enjoy!
