Soft Pretzels

Directions

  1. 1In a bowl, mix 4 cups of bread flour, 2.25 teaspoons of yeast, 2 tablespoons of light brown sugar, and 1.5 teaspoons of salt. Whisk well to combine.
  2. 2Add 1/4 cup of oil and 1.5 cups of warm water to the bowl. Stir until the ingredients form a dough.
  3. 3Turn the dough out onto a clean surface. Knead the dough until it becomes nice and stretchy and no more dry flour is visible. Do not add more liquid.
  4. 4Spray a bowl with oil and place the kneaded dough into the bowl. Cover with plastic wrap and let it rise until doubled in size (about an hour).
  5. 5Once the dough has proofed, turn it out onto a clean surface. Preheat the oven to 450°F.
  6. 6Using a pizza cutter, cut off a section of the dough, roll it out, then shape it into a pretzel. Repeat until all dough is used.
  7. 7In a shallow dish, combine water and about 1/4 cup of baking soda; stir until the mixture is cloudy. If not cloudy, add more baking soda.
  8. 8Dip each pretzel in the baking soda water, then place on a parchment-lined baking sheet. Brush with egg wash and sprinkle with pretzel sea salt.
  9. 9Bake at 450°F for 10 minutes. Brush with melted butter before serving.
