Crush up your pretzels using a food processor or by placing them in a plastic bag and using a rolling pin.

Pour the crushed pretzels into a shallow dish.

Whisk up a couple of eggs with some hot sauce in another shallow dish.

Take your bone-in, center-cut pork chops and season them with salt and pepper.

Dip each pork chop in the egg mixture.

Coat each pork chop liberally in the crushed pretzels.

Pan-fry the pork chops in a large skillet for a couple of minutes on each side until they are golden and crisp.

Transfer the pan-fried pork chops to a wire rack set inside a rimmed baking sheet.

Pop the pork chops in the oven to finish cooking for about 10 minutes.

To make the honey mustard sauce, combine stone-ground mustard, mayonnaise, apple cider vinegar, and honey in a small bowl.

Season the sauce with salt and pepper.
