Dice the chicken thighs and season them with salt and pepper.

Place the seasoned chicken thighs in a large ovenproof pan over medium-high heat and cook until golden.

Slice the onion, carrots, and leek.

Add the sliced vegetables and butter beans to the pan with the chicken.

Add garlic and thyme.

Add flour to thicken the mixture.

Pour in chicken stock.

Add crème fraîche.

Add Dijon mustard.

Stir in frozen peas and sweetcorn.

Place scrunched filo pastry on top of the filling.

Spray with olive oil or brush with melted butter and sprinkle with flaky salt.

Bake in the oven for about 20 minutes until crispy and golden.
