Sear the 4 lb beef chuck roast seasoned with flavor time Southern seasoning in a hot skillet with a little oil until seared on both sides.

Remove the seared roast from the skillet and place it into the crock pot.

In the same pan, melt one stick of butter.

Add one chopped medium-sized onion, five chopped ribs of celery, and five sliced carrots to the pan.

Add half a tablespoon of black pepper, garlic powder, and oregano to the vegetables.

Stir in one packet of au jus gravy, one packet of beef stew, and one packet of Lipton onion soup mix.

Add one 8 oz can of tomato sauce and 8 oz of pepperchini slices with some of their juice.

Pour in one 14 1/2 oz can of beef broth.

Bring the mixture to a simmer while stirring and let everything get incorporated for a few minutes.

Add all the mixture from the pan into the crock pot with the roast.

Place the lid on the crock pot and cook on high for 6 to 7 hours.

Tips
Sear the roast on both sides to get a good crust, but don't cook it all the way through.
Let the mixture for the gravy simmer and incorporate for a few minutes before adding it to the crock pot.
