Steak Queso WITHOUT Velveeta

Directions
- 1Melt cheese over medium heat and mix with flour.
- 2Add in milk and stir until thick and bubbly.
- 3Stir in all the cheeses, tomatoes, and chiles.
- 4Let that get melty and set burner to low.
- 5Dice up steaks into bites and season generously.
- 6Cook until you reach about medium doneness.
- 7Sauté onions in steak juices and combine with queso.
- 8Top with steak and cilantro and dip in.
Ingredients
- 2 NY strips (or steak of your choice)
- 0.25 cup butter
- 0.25 cup flour
- 2.5 cups whole milk
- 8 oz shredded sharp cheddar
- 8 oz shredded smoked cheddar
- 8 oz shredded colby jack
- 8 oz cream cheese
- 15 oz can fire roasted tomatoes
- 8 oz can diced green chilies
- Salt
- pepper
- garlic (I used The Blend)
- 1 diced yellow onion
- Cilantro as garnish
