Crispy Cheesy Beef Tacos

Directions

  1. 1In a bowl, add yogurt, light mayo, chili lime hot sauce, honey, smoked paprika, onion powder, and fresh parsley; mix till smooth and creamy, then set aside in the fridge.
  2. 2Line a large sheet pan, add chopped bell peppers and onion, spray with avocado cooking spray, and season with taco seasoning mix.
  3. 3Mix the vegetables well and spread evenly.
  4. 4Oven roast the vegetables for 15 minutes at 180C / 370F.
  5. 5Spread the lean ground beef over the veggies, add more taco seasoning, tomato paste, and fresh coriander.
  6. 6Mix until well combined, flatten, then use a spatula to score lightly.
  7. 7Spray the tray again with cooking spray.
  8. 8Oven bake for just 6 minutes at 180C / 370F to partially cook the beef.
  9. 9Break up the beef.
  10. 10Return to the oven for another 6 minutes until lightly crisp.
  11. 11Add a splash of water, then mix until juicy and delicious.
  12. 12Remove the beef from the tray.
  13. 13Dip the tortillas in all the pan juices.
  14. 14Lay out the tortillas, fill generously with mozzarella and the juicy beef.
  15. 15Fold the tacos tightly.
  16. 16Oven bake for 12 minutes, flipping halfway, until golden and crispy.
  17. 17Serve with the honey chili lime sauce.

  • 1 Tsp Onion Powder
  • 1 Tsp Cumin
  • 4 Tsp Avocado Cooking Spray

Tips
