Directions

  1. 1Heat butter and olive oil over medium-low heat.
  2. 2Add diced onions and cook 15 minutes, stirring often and adding small splashes of water as needed, until deeply caramelized.
  3. 3Set caramelized onions aside.
  4. 4In a bowl, mix all sauce ingredients until smooth.
  5. 5Thin sauce with water if needed.
  6. 6Divide beef into 8 equal balls.
  7. 7Press one ball of beef directly onto each tortilla and flatten thin.
  8. 8Season the beef side with salt and pepper.
  9. 9Heat a pan over medium-high.
  10. 10Cook tacos beef-side down for 3 minutes until crispy.
  11. 11Flip tacos, add cheese, and cook 1–2 minutes until melted.
  12. 12Top with sauce, extra caramelized onions, and shredded lettuce.
  13. 13Fold and serve immediately.

  • 8 small street-size flour tortillas
  • 8 slices reduced-fat cheddar cheese
  • Salt
  • black pepper
  • 1 large yellow onion, diced
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 0.75 cup plain nonfat Greek yogurt
  • 0.25 cup light mayo
  • 4 tbsp sugar-free ketchup
  • 3 tbsp sweet relish
  • 3 tbsp caramelized onions
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp white vinegar
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp water to thin (optional)
  • shredded iceberg lettuce
  • extra caramelized onions

Tips

  • Toss the lettuce in some of the sauce before adding.
  • Add small splashes of water as needed when caramelizing onions to prevent burning and help the process.
