Loaded Sweet Potatoes

Directions

  1. 1Wash the sweet potatoes (do not peel). Rub with olive oil and sprinkle with salt.
  2. 2Bake at 400°F (200°C) for 45-55 minutes, until very soft inside.
  3. 3While the potatoes bake, heat a pan over medium heat.
  4. 4Add olive oil, onion, and cook 3-4 minutes until soft.
  5. 5Add garlic and cook 30 seconds.
  6. 6Add ground beef, season with salt, pepper, and paprika.
  7. 7Cook 6-8 minutes until browned.
  8. 8Stir in baby spinach and cook 1 minute, just until wilted. Set aside.
  9. 9Remove potatoes from the oven.
  10. 10Slice each one lengthwise.
  11. 11Add butter directly into the hot potato and mash the inside with a fork until creamy.
  12. 12Top each potato with beef filling, then sprinkle with cheese.
  13. 13Return to the oven at 400°F (200°C) for 8-10 minutes, until cheese melts.
  14. 14Add a spoon of sour cream and sprinkle with green onions.
  15. 15Serve with guacamole and salsa on top or on the side (or keep it simple with tomato, avocado, and corn).

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil

  • 2 cups baby spinach
  • 2 -3 tbsp butter
  • 1.5 cups shredded cheese (cheddar or mix)
