Tuna Cucumber Boats

Directions

  1. 1Add 2 cans of drained tuna to a medium mixing bowl.
  2. 2Finely dice half or 1 full jalapeño, the dill pickles, & diced red onion. Toss them in with the tuna.
  3. 3Boil 2 medium eggs for 7.5 mins. Drop them into an ice bath, peel, dice, & add to the bowl for that extra protein boost.
  4. 4Stir in 1 tbsp Dijon mustard, 1.5 to 2 tbsp mayo, 1 tbsp sriracha or hot sauce, and a pinch of salt & pepper. Mash well with a fork until well combined.
  5. 5Scoop out a large English cucumber and scoop in your tuna.
  6. 6Top it off with some sesame seeds and a drizzle of chipotle hot sauce.

  • 2 cans (7oz total) tuna, drained
  • 2 medium boiled eggs
  • 0.5 jalapeño, finely diced
  • 0.25 cup finely diced dill pickles
  • 0.5 small red onion
  • 1 tbsp Dijon mustard
  • 1.5 tbsp mayo
  • 1 tbsp sriracha or hot sauce
  • 1 pinch Salt
  • 1 pinch pepper
  • 1 English cucumber
  • Sesame seeds
  • chipotle hot sauce

Tips

  • Deseed jalapeño if you want less spice.
  • You can use lettuce, bell pepper, or sourdough as an alternative to cucumber.
  • Boil eggs for 7.5 minutes and then put them in an ice bath to peel and dice easily.
