Directions

Remove excess fat from the ribs using a sharp knife.

Remove the membrane from the ribs using a knife or spoon and a paper towel to help with grip.

Add liquid smoke to the ribs.

Add yellow mustard to the ribs as a binder.

Apply AP seasoning and your favorite BBQ rub to the ribs.

Bake the ribs uncovered in the oven at 275° for about 2 1/2 hours.

Prepare the sauce by combining butter, brown sugar, ketchup, chipotle peppers in adobo (juice only), honey, and molasses in a pan.

Mix the sauce over medium-low heat.

Once the ribs are tender (check with a meat thermometer), unwrap them.

Place the ribs meat-side down on a bed of butter, brown sugar, and honey.

Top with more butter, brown sugar, and honey, then wrap tightly in aluminum foil.

Return the ribs to the oven at 275° for another 1 1/2 hours.

Unwrap the ribs, coat them with BBQ sauce, and bake at 325° until the sauce caramelizes.

1 slab baby back or spare ribs
1 AP Seasoning
1 BBQ Seasoning
1 liquid smoke
1 stick butter
0.25 cup honey
0.25 cup brown sugar
0.25 cup fruit juice, beer, or broth
2 tbsps butter
0.5 cup brown sugar
1 cup ketchup
0.25 cup molasses
0.25 cup honey
1 can chipotles in adobo
1 AP Seasoning
1 dash liquid smoke
