Iskender Kebab Loaded Fries

Directions

  1. 1Cut the potatoes into thick french fry shapes.
  2. 2Give the potato fries an ice bath to remove any starch.
  3. 3Spray the fries with avocado oil.
  4. 4Season the fries with salt, pepper, and paprika.
  5. 5Air fry the seasoned fries at 400 degrees Fahrenheit until golden brown and crispy.
  6. 6While the fries are cooking, cut top sirloin steak into thin strips.
  7. 7Season the steak strips with salt, black pepper, cumin, smoked paprika, and a drizzle of olive oil.
  8. 8Sear the steak in a smoking hot pan until golden brown.
  9. 9Set the cooked steak aside.
  10. 10In the same pan, add onions, garlic, tomato paste, and seasonings.
  11. 11Cook down the mixture until it looks like a thick paste.
  12. 12Add a can of tomatoes and a little bit of water to the pan.
  13. 13Let the tomato sauce simmer for a few minutes.
  14. 14Assemble the dish by placing the fries on a plate or bowl.
  15. 15Top the fries with the cooked steak.
  16. 16Add some diced onions.
  17. 17Pour the tomato sauce over the steak and fries.
  18. 18Add a dollop of Greek yogurt.
