Beef in Black Bean Sauce

Directions

  1. 1Get salted dried black beans
  2. 2Soak the beans in hot water.
  3. 3Drain the beans.
  4. 4Mix soy, oyster, sugar, sesame, and cornflour to thicken.
  5. 5Slice the beef
  6. 6Use the same ingredients for the sauce and the marinade.
  7. 7Marinate the beef in baking soda to tenderize.
  8. 8Cook the beef first.
  9. 9Shallow fry the beef to lock in flavor and juiciness.
  10. 10Add black beans and garlic first.
  11. 11Add the onion and capsicum.
  12. 12Add beef back in with the sauce.
  13. 13Cook until the sauce becomes thick and shiny.
  14. 14Serve over rice and enjoy.

  • 0.5 cup preserved black beans (salted black beans, fermented black beans)
  • 400 g beef rump steak (US: top sirloin)
  • 1 tbsp garlic
  • 1 brown onion
  • 1 green capsicum (bell pepper)
  • 0.5 cup peanut oil (or veg, canola)
  • 1 tbsp Chinese cooking wine (shaoxing wine)
  • 1 tbsp light soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp dark soy
  • 2 tsp cornflour / cornstarch
  • 0.25 tsp baking soda (bi-carbonate)
  • 1 tbsp sesame oil
  • 1 tbsp light soy sauce
  • 2 tbsp cornflour/cornstarch
  • 2 tsp white sugar
  • 1 cup water
