Separate three room-temperature eggs, ensuring no yolk gets into the whites.

Pour the egg whites into a mixer and start whipping them.

Gradually add a little bit of sugar to the egg whites until they become glossy.

Add food coloring to the egg whites if desired and continue to whip until stiff peaks form.

Fold in the dry ingredients (powdered sugar and almond flour) into the meringue in two incorporations.

Gently pipe out the macaron batter onto a non-stick baking sheet.

Bake the macarons at 315°F for 20 minutes.

Assemble the macarons by piping a dollop of cream and then a dollop of strawberry jam onto one macaron shell, then topping it with another shell.
