Stack the collard greens, roll them, cut off the stems, make a slit in the middle, and then chop them into pieces.
Wash the chopped collard greens thoroughly with salt, at least five to six times, until the water runs clear.
Sauté sliced onion and garlic in a large pot for about 2-3 minutes.
Add the smoked turkey drumstick and pour chicken stock into the pot.
Cover the pot and let the turkey drumstick and chicken stock cook.
Add the chopped collard greens to the pot, in batches if necessary, letting them cook down for about 5 minutes before adding more.
Season the greens with paprika, onion powder, garlic powder, black pepper, Italian seasoning, red crushed peppers, chicken bouillon paste, and brown sugar.
Stir the greens and seasonings thoroughly to combine.
Cover the pot and let the collard greens cook for about 2-3 hours on low heat until fully tender.
Remove the smoked turkey bone from the pot and shred the meat back into the greens.
Stir the shredded turkey meat into the collard greens.
