1Put 1 pound of chicken thighs into your food processor with Old Bay seasoning and cayenne (optional), then blend for about 30 seconds until ground.
2Take your favorite string cheese and cut them in half to get pieces about this size.
3For each stick of mozzarella, put a little bit of the ground chicken meat and cover it evenly.
4Dip the chicken-covered cheese in cornstarch.
5Put the pieces in the freezer to firm up before frying.
6For the crispy dredge, combine 1 cup of self-rising flour (or 1 cup normal flour and 1.5 tsp baking powder), seasoning, 1.5 cups of cold water, and finely chopped parsley.
7Drop the chicken baby boys into the batter and shake off the excess.
8Fry these at 390 degrees for 5 minutes.
