Directions

  1. 1Peel and cube the gold potatoes.
  2. 2Add the potatoes to a pot of boiling water heavily seasoned with salt.
  3. 3Boil the potatoes for 12 to 15 minutes or until fork-tender.
  4. 4Drain the potatoes and mash them in a large bowl until smooth.
  5. 5Add cornstarch, seasonings, chopped parsley, and grated parmesan cheese to the mashed potatoes and mix well with hands.
  6. 6Take a portion of the mixture, flatten it, place a cube of mozzarella in the center, and roll it into a ball.
  7. 7Refrigerate the balls for 40 minutes to firm up.
  8. 8Deep-fry the balls in 350-degree oil for 2 to 3 minutes.
  9. 9Finish by tossing the fried balls in garlic butter, fresh parsley, and grated parmesan cheese.

  • 1/2 cup cornstarch
  • 1 to taste seasoning
  • 1 to taste parsley
  • 1 to taste parmesan cheese
  • 1 to taste mozzarella cheese

Tips

  • Recommended to double-fry: let the balls cool down after the first fry and fry again for one minute to make them super crispy.
  • Serve with ranch dressing.
