1Mix all ingredients (chicken, turmeric powder, salt, ginger garlic paste, green chillis, yogurt, mustard oil) in a bowl.
2Marinate for 1-2 hours.
3Prepare homemade garam masala by dry roasting cloves, green cardamom, cinnamon, black peppercorns, javitri, jaiphoal, coriander seeds, cumin seeds and dry red chillis in a pan.
4Grind the roasted spices into a powder using a mortar and pestle.
5Slice 300gm onions.
6In a pan, sauté the onions with 1/4 cup of mustard oil and a pinch of sugar until caramelized.
7Add marinated chicken to the caramelized onions.
8Cook on high heat for five minutes.
9Add 3/4th of the homemade garam masala and 3 tbsp of warm water.
10Cover and cook on low flame for 20 minutes.
11Meanwhile, prepare a mix of curd, Kashmiri red chilli powder, and besan.
12Turn off the gas, and mix the curd mixture with the chicken, the rest of the garam masala, and brown ghee.
