Cowboy Butter Steak Bites

Directions
- 1Peel and cut potatoes.
- 2Slice onion.
- 3Slice ribeye into bite sized pieces.
- 4Add olive oil to a pan and add the sliced onions.
- 5Caramelize onions.
- 6Chop chives.
- 7Melt butter in a pan on low heat.
- 8Add paprika, cayenne, chilli flakes, garlic, dijon mustard, lemon zest and juice, parsley, chives, salt and pepper to the melted butter and whisk.
- 9Remove from heat and set aside until ready to serve.
- 10Use a potato ricer to mash the potatoes.
- 11Add roasted garlic, butter and cream to the potatoes and mix.
- 12Sear ribeye on all sides in a stainless steel pan.
- 13Open a bottle of red wine.
- 14Plate the mashed potatoes, caramelized onions, and ribeye.
- 15Coat with cowboy butter and serve.
