Wash and cut 5 pounds of red potatoes into equal sizes and parboil them in salted water.

In a large pot, melt 2 tablespoons of bacon grease.

Add 8 ounces of diced ham and cook until lightly browned.

Add 4 slices of bacon and cook until crispy. Remove and set aside.

Add 1 cup of flour to the pot and cook, stirring constantly, until a roux is formed.

Stir in 1 teaspoon each of garlic powder, onion powder, paprika, oregano, salt, and black pepper.

Pour in 4 cups of reduced sodium chicken broth and 1 cup of whole milk.

Add 1 can of cream of chicken and 8 ounces of sour cream.

Add 8 ounces each of shredded cheddar cheese and Monterey Jack cheese; stir until melted.

Stir in the cooked bacon and ham.

Add the parboiled potatoes and heat on low until warmed through.

Tips
