1In a bowl, add diced potatoes, followed by a bit of olive oil and the seasonings (listed on screen and in the caption below).
2Mix the potatoes together and air fry or oven bake them with the settings on screen.
3While the potatoes are baking, cook up some diced onions.
4Once the onions have some color, add some extra lean beef mince.
5Add a bit of Worcestershire sauce and the same seasonings you used in the potatoes to the mince.
6Once the mince is nearly cooked, add tomato paste and diced garlic, mix and let it fully cook through.
7In a bowl, add eggs and blended cottage cheese for extra protein.
8Mix the egg and cottage cheese mixture together and cook it on low to medium heat, mixing gently every minute or so.
9Season the cooked eggs.
10Grab a warm tortilla, evenly distribute the egg, mince, and potatoes.
11Top it off with some sriracha mayo and chives.
12Roll the burrito, then toast it.
13Repeat the process for the other nine burritos.

25 g Sriracha Mayonnaise (Flying Goose Sriracha Mayonnaise or mix 250g of light mayonnaise with 10g of sriracha & evenly distribute across 10 burritos)

Tips
To prevent the tortillas from breaking when you roll them, heat them on a pan on low heat for 30 seconds on each side.
To cook the eggs perfectly and make them super fluffy, cook on low to medium heat, mixing gently every minute or so.
Store the burritos in your freezer. To reheat, take the burrito out of the wrapper/foil, wrap it in a slightly damp paper towel, microwave for around 2 minutes to thaw. Then, air fry at 190C or 375F for approximately 5 - 8 minutes, or use an oven or pan.
