Directions

  1. 1Start with 250 grams of blended cottage cheese. Sometimes add a quarter cup of water to make it blend more easily.
  2. 2Add a quarter of a cup of carnivore chicken flour (or crushed up pork rinds or egg white powder if not available).
  3. 3Add two quarter cups of collagen powder.
  4. 4Add one full cup of mozzarella cheese.
  5. 5Crack in one whole egg and also one egg yolk.
  6. 6Add 150 grams of melted or room temperature butter.
  7. 7Add a sprinkle of salt and then mix until combined.
  8. 8In a separate bowl, add one full cup of egg white powder.
  9. 9Add one full cup of water and then a half cup.
  10. 10Next, add a quarter of a spoon of cream of tartar.
  11. 11Whisk your egg white mixture until stiff peaks start to form.
  12. 12Fold in the cottage cheese mixture into the egg whites, making sure to keep it light and fluffy.
  13. 13Pour this into a butter-lined baking dish.
  14. 14Sprinkle over mozzarella cheese and flaky salt.
  15. 15Place this into a preheated oven at 200 degrees Celsius.
  16. 16Bake for half an hour.
  17. 17Turn off the oven, crack the door, and let it cool upside down to let the bottom cook a little and avoid deflating.
  18. 18Slice, toast, and enjoy.
