Bake garlic at 325°F (165°C) for 45-60 min, fully covered with oil. No lid needed. Garlic should be soft and golden.

Alternatively, simmer garlic fully covered with oil on very low heat for 25-40 min (no frying, no bubbling). Cool slightly, then squeeze garlic out.

Combine butter, roasted garlic, parsley, Parmesan, lemon juice, salt & pepper. Blend until smooth and whipped, or use a fork for a rustic texture.

Slice bread in half.

Spread garlic butter generously on the bread.

Top with Parmesan first, then add mozzarella.

Bake at 400°F (205°C) for 10-12 min.

Broil for 1-2 min until bubbly and golden.

Rest for 2 min.

2 heads roasted garlic cloves

Tips
If your oven runs hot, loosely cover with foil to prevent burning.
You can also bake the bread wrapped in foil using very little oil.
