1Make the sauce: char the red pepper directly on a gas flame, chop and then blend it with nduja paste. Add to a pan with chopped onions, garlic, parsley, and chicken stock. Simmer until it thickens
2Make Cowboy Butter: mix softened butter, chives, paprika, chilli flakes, salt, pepper, lemon zest, thyme and parsley in a bowl.
3Cook the steak: season the rib-eye generously with salt and sear it on a hot pan. Add Cowboy Butter and baste the steak until cooked.
4Cook eggs: whisk eggs and fry them in the steak pan. Add spicy cheddar cheese in the middle and fold the edges.
5Assemble the sandwich: spread the sauce generously on toasted bread, layer with the steak, the folded eggs, and mozzarella. Add more sauce, chives, and top with another piece of bread. Wrap it up in parchment paper before serving.
