2In a bowl, add your ground chicken, oyster sauce, soy sauce, minced garlic, cornstarch, white pepper, black pepper, salt, and your green onions to make your filling.
3In a pan on medium heat coated with spray oil, add your filling and sauté until cooked through.
4Set aside the cooked filling to cool.
5Dip your rice paper into water to soak it.
6Place your wet rice paper down and in the center, add a scoop of your cooked filling and wrap it into a square, sealing the filling inside.
7Place your squares back on the same non-stick pan on medium-low heat and cook on each side until the rice paper turns light brown and crispy.
8Prepare the dumpling dipping sauce by combining soy sauce, chili oil, sesame oil, sesame seeds, and water.

Tips
Do not over wet the rice paper or it will become soggy, and don’t wait longer than 1 minute after wetting, or else it will get too soggy.
