Creamy Lemon Butter Chicken

Directions

  1. 1Coat chicken cutlets lightly with oil and season both sides with thyme, oregano, garlic powder, paprika, salt, and pepper.
  2. 2Set up three bowls for breading: one with flour, one with beaten eggs, and one with breadcrumbs mixed with thyme, oregano, garlic powder, salt, and black pepper.
  3. 3Coat each chicken cutlet in flour, then egg, then the seasoned breadcrumbs.
  4. 4Heat oil and butter in a skillet over medium heat.
  5. 5Pan-fry the breaded cutlets for 3-4 minutes per side until golden and cooked through.
  6. 6Transfer cooked chicken to a plate and cover loosely.
  7. 7In the same pan, melt butter and sauté minced garlic for 30-60 seconds.
  8. 8Add lemon juice, chicken broth, and Dijon mustard, then simmer for 2-3 minutes.
