Directions

  1. 1Add flour, salt, curd, baking powder, and water to make a soft dough.
  2. 2Add oil and knead well.
  3. 3Rest the dough for an hour.
  4. 4Mix boiled mashed potatoes, crushed paneer, chopped onion, green coriander, green chillies, ginger, cumin, coriander seeds, salt, red chilli powder, carom seeds, kasuri methi, and black pepper for the stuffing.
  5. 5Divide the dough and the stuffing into equal parts.
  6. 6Stuff each dough ball with the stuffing and seal. Roll out to an oblong shape.
  7. 7Brush the top of the kulcha with water and sprinkle nigella seeds and chopped coriander leaves.
  8. 8Heat the tawa, add water, and place the kulcha over it and cover immediately.
  9. 9Allow the kulcha to cook till the water evaporates and the underside is golden.
  10. 10Apply ghee over the kulcha, flip, and cook till brown specs over it.
  11. 11Serve hot.

  • 1.5 Cup flour
  • 0.5 Tsp salt
  • 4 Tbsp curd
  • 1 Tsp baking powder
  • as required water
  • 2 Tbs oil
  • 0.5 cup boiled mashed potatoes
  • 250 Gms crushed paneer
  • 0.5 cup fine chopped onion
  • fine sliced coriander
  • fine chopped green chillies
  • 1 tsp rosted cumin powder
  • Ginger
  • to Taste Salt
  • 1 tsp Red Chillies
  • 0.25 tsp Carom Seeds
  • 1 tbsp Kasuri Methi
  • 1 tsp Black Pepper
  • Nigella Seeds
  • Green Coriander
  • ghee

Tips

  • Cooking in steam gives the kulcha a soft chewy texture inside while the finishing over the tawa keeps it crisp on the outside!
