Michelin Star Hummus

Directions

  1. 1Soak dried chickpeas in salted water overnight.
  2. 2Drain and rinse the chickpeas a few times.
  3. 3Add chickpeas to a pressure cooker and cover with plenty of water, then cook for 30 minutes (or 2 hours on the stove).
  4. 4Drain the chickpeas, reserving the chickpea water.
  5. 5Add the chickpeas to a blender with just enough reserved chickpea water to get a nice smooth mix.
  6. 6Cover the chickpea mix and let it cool in the fridge overnight.
  7. 7At the same time, take a little bit of the leftover chickpea water and freeze it overnight.
  8. 8Add the chickpea mix to a blender along with some of the frozen chickpea water.
  9. 9Once it comes together, add tahini and lemon juice.
  10. 10Finish with salt and a little oil to get it nice and glossy.
  11. 11Taste and adjust to suit your preference, adding more tahini or lemon if desired.

Tips

  • Soaking chickpeas in salted water helps soften the skins, eliminating the need to remove them.
